It’s also really easy to make, and comes together in less than 30 minutes! The avocado adds a creaminess and richness to the light broth and is naturally low-carb, keto and Whole30 friendly. If you wish, you can also add tortillas or serve it with rice on the side.

Growing up, my mom made soup practically every night whether it was a first course or the main meal. When she made her Colombian soups, avocados were always on the table to eat with the soup. As a kid, I wasn’t a fan, but as an adult I grew to love them and now I practically eat them every day!

Variations and Tips:

  • If you don’t have shredded chicken, you can cook 2 chicken breasts in the broth until tender, about 15-20 minutes, then shred with a fork (don’t overcook).
  • If you prefer dark meat, boneless skinless chicken thighs work great here too.
  • To make it spicy, add jalapeno or serrano peppers.
  • To pack for work, bring the broth in a thermos or jar with the chicken, and bring the avocado separate, covered with plastic to prevent it from browning. When ready to eat, slice the avocado and add to the soup.

Ingredients

  • 2 tsp olive oil
  • 1-1/2 cups scallions, chopped fine
  • 2 cloves garlic, minced
  • 1 medium tomato, diced
  • 5 cups reduced sodium chicken broth
  • 2 cups shredded chicken breast, 12 oz
  • 8 ounces from 2 small ripe hass avocados, diced
  • 1/3 cup chopped cilantro
  • 4 lime wedges
  • kosher salt and fresh pepper, to taste
  • 1/8 teaspoon cumin
  • pinch chipotle chile powder, optional

Instructions

  • Heat a large pot over medium heat.
  • Add the oil, 1 cup of scallions and garlic. Sauté about 2 to 3 minutes until soft then add the tomatoes and sauté another minute, until soft.
  • Add chicken stock, cumin and chile powder and bring to a boil. Simmer, covered on low for about 15 minutes.
  • In four bowls, fill each with 1/2 cup chicken, 1/2 avocado, remainder of the scallions, and cilantro. Ladle 1 cup chicken broth over the chicken and serve with a lime wedge.

  1. I have made this soup for my family and let me just say that we are have it at least a few time out of the month. Also when they are sick they request this also. I have been trying your recipes since 2010. Keep up the great recipes.

  2. Easy and yummy! I did up the spice 1/4 tsp of cumin and 1/8 tsp of Chipotle chili and just squeezed a whole lime into the broth before serving.

  3. Delicious!!!! Reminds me of a chicken tortilla soup but so much quicker to make and just as flavorful. Don’t forget the lime and cilantro at the end. That makes the soup 💕

  4. This is one of my favorites! I add more cumin and garlic and love the healthy fresh flavor this soup brings and I feel good after I eat it.  I always put rice in the soup after it’s made.   This is soo good and my kids love it I’ve made it a million times now !

  5. This was delicious! It’s a great recipe that leaves plenty of room for customization. I added a little elote seasoning into my broth and it was so good. I also cooked my chicken breasts in the air fryer with a good dry rub for added flavor on the meat. Will definitely be making this again. I imagine it would be great with some roasted corn and cotija added in.

  6. I have been making this soup for years now, it’s one of my son’s favorites, there’s something special about getting your own lime wedge to squeeze in the soup.

    I have tomato-haters in my home so I use my emersion blender in the soup, I also like the consistency it adds. To keep the boys tummies satisfied I add rice.

  7. Have this on the stove for the first time! It’s still SO HOT here in Texas, but I’ve been dreaming of soups and so far I feel like this is like a trick question since technically it’s *poured* over the meat. And it smells SO good I cannot wait.

  8. This soup is on my rotation and I really like how simple but so flavorful this soup is. The limes are necessary for this meal. If you want a meatier meal, you can add mushrooms. I’ve done this several times and like it too. Wonderful soup!

  9. This was okay, but I’m in the ‘it was super bland’ category. I used quality broth, spices. Followed to a T. We ate it, but I will change it up quite a bit the next time I make it, if I do. I was looking to use up avocados but eh.  I might skip this one next time. That’s ok – can’t please us all all of the time! Was very quick and easy, though!

  11. I’ve made this recipe but have added extra ingredients which make it an easy version of Caldo Tlapeño (a Mexican soup). I just add carrots, celery, and chickpeas and when it’s ready to serve I sprinkle on some mozzarella cheese. The combo sounds weird but its so tasty and so nutritious. And my kids love spooning out the gooey cheese!

  13. This soup is so delicious! I had all ingredients and slightly increased quantities based on what I had. I cooked 3 huge, partially frozen chicken breasts directly immersed in Better than Bouillion (BTB) ~Roasted Chicken Broth in the Instant Pot and diced the chicken into small chunks as a personal preference.

    For added heat we enjoy, I had a couple of chipotle chilies in adobo sauce I needed to use up, so fine chopped them to add to the delightful simmering broth. The broth itself was also made with above BTB roasted chicken base (so flavorful). Closer to serving, I threw in small pouch of frozen cauliflower rice to the hot soup for oomph and texture for the spouse ~ it cooks immediately and we enjoyed that addition.

    Quality, grated sharp cheddar was used in the bottom of each of our bowls, then I ladled the hot soup over, Love the green onion, avocado, fresh cilantro finishing touches plus the lime wedge for an authentic taste. Added a small dollop of full fat sour cream on top as a personal habit with these types of soup or chili dishes. It’s definitely going into our meal rotation as a true winner!

    1. Yes! I just made it with the instant pot last night. I modified the recipe a bit, but basically its the same conceptually. I used the saute function for the onions and garlic, waited until they were soft (a few minutes), added tomato (I used diced canned tomatoes), gave it a minute. Then added the broth and spices. At this point you could probably hit the soup button (20 min on high pressure) and add your chicken and avocado later. I didn’t have roasted chicken, so I added 2 chicken breasts and used the soup function. Gave it about 5 minutes and then quick released, shredded the chicken and put it back in the soup. I add the avocado after i heat it up for lunch each day.

  14. I’d like to make a batch of this and freeze it.  Since it is listed as a freezer meal, can you provide how to prep it as such?  I suspect adding the cilantro and scallion won’t make for trouble, but what guidance do you have for the avocado?

  18. Delicious! I used baked chicken thighs and breasts that I seasoned verde stye.  Also, chicken bone broth.  We’re on the Keto Diet…husband and I both enjoyed!

  28. Oh my goodness! This soup is definitely in my top 10 favorites of all Gina’s recipes. I used leftover rotisserie chicken breast and substituted shallots for some of the green onions. If you’ve ever eaten the chicken tortilla soup at Cafe Rio – this is close but even more delicious. I added shredded cheese to my husband’s serving. Next time I might add a few low fat tortilla chips. I’m blown away-the best soup ever!

  32. Haven’t made this soup in awhile, thought I’d whip it up for this cold winter night. I think this is one of my favorite skinnytaste recipes. Thank you for sharing your delicious recipes and my husband says thanks too! I added 8oz of coconut milk to our batch tonight and it made the broth a little creamy. I have loved it both ways, trust me you can’t go wrong with this one.

    Hi Gina. I am a foodie and just by chance I made a chicken soup that was too sparse, so I threw in an slightly underripe large avocado and was stunned at the brilliance of the results. It was a hit and tasted like something new and exciting. So, from one Gina to another, I wanted to see if there was anyone else who had a similar recipe. Only to come across you!   37. There is a chicken tortilla soup that I get at a Mexican restaurant by me and I love it soooo much. After seeing all the ingredients in your soup (minus the tortillas), I think this may be very close to it. It's in the crock pot now and I can't wait to add the tortilla strips and avocado when I gulp it down. Yummmm

  39. This soup was one of the best soups I've made in a long time! Very healthy & very delicious. The only thing I did different was add in some fresh sliced mushrooms, fresh cut carrots, some baby corn and a bad of bean sprouts. DELISH!!!!

  40. I made this but made a few modifications: To bulk up the veggies I added 2 carrots and a diced zucchini. I also wanted it to have a lot of citrus flavor, so used 3 small limes. I also added a pinch of smoked paprika and a pinch of cayenne for a little heat. I put 1/4 a cup of brown rice in each bowl as well. Came out really well!

    Love this soup so much! Not sure how you get 14 carbs though. I do low carb and I don't see the 14 carbs in one serving…. A whole avocado has 4-5 carbs and 1/4 cup of tomatoes has almost 5. Am I missing something?

    I live on this soup so I thought I had better ask!

    1. One and a half cup scallions is around 10 carbs, chicken broth may have 1-2 g of carbs per cup, depending on what brand you use.

  69. for and avocado to keep it's color and not brown I put plastic wrap on it as soon as I cut it, just make sure you don't leave any air bubbles, the plastic should be completely against the "meat" of the avocado, also leave the pit in, will keep the center from browning! Also try lime juice!!

  77. We just had this soup last night. It was awesome! So easy. Wanted to mention how much the cilantro and lime really make the flavor pop. Also, the only thing I might add next time is green chilies (being from NM and all, we add them to pretty much everything).

    I had to tell you that I've pretty much planned out the next two weeks worth of dinners with all your meals. I love how flavorful they all sound. 🙂

  89. I too know this as tortilla soup, and it's been one of my cold-weather staples since long before I started weight watchers. I just made a huge batch in my crock-pot last night. I love how filling it is! I add frozen corn and halved jalapeno and/or serrano peppers to mine as well, and a can of ro-tel rather than tomatoes. I never thought to add lime juice, I'll have to try that!

    I don't have a cookbook yet, but I do hope to have one in the future. I make my own chicken broth, sometimes I use canned broth, and sometimes a bullion cube works if I have nothing else.

  94. I had some dental work done this week; I was looking for a soup with some slight, but easily chewed texture when I came across your blog. This soup is absolutely fabulous – I switched out the chicken for some firm tofu which I cut into tiny cubes. OMG You made me so happy!!!! This was beyond delicious. You use broth a lot and where I buy broth it is 3 to 4 dollars per recipe I make. I was wondering if there is a cheaper way to do broth? maybe the bouillon cubes.

  104. This is my third day in a row having this for lunch. I have your crockpot stock portioned into freezer bags, few minutes in the microwave, chop up some avocado, the broth is so flavorful I've even had it without the chicken, just the broth & avocado. YUM!

    1. Do you cook raw chicken in slow cooker and shred shortly before serving? Or do you recommend cooking/shredding chicken first and then cooking on low for 8 hours?

  106. My mom sent to me to your site Friday. It's now two days later and we've already had two Gina WW dinners. This was the second and my family absolutely loved it. My partner said it was like something he'd have in a restaurant. The lime makes the meal, seriously.

    I sauted the veggies earlier today. I put them, the chicken, the seasoning, and the broth in the crock pot to cook all day. When I served it I included Chipotle Cilantro Lime Rice to the options to add to the bowl. Rave reviews from the boys in the house. Thanks, Gina!

  109. I found your site on stumbleUpon today, and *had* to try this recipe. I susbstituted veggie broth for the chicken broth and chickpeas for the chicken to make this vegetarian. It has wonderful flavor, and is very filling.

    1. I made this vegan just by ommiting the chicken and chicken broth and using portabella mushroom and veggie broth in its place. My family (who are NOT vegans) said it was fantastic and want it again, even the 6 year old! Thanks for the great recipe! 🙂
