This Chicken and Avocado Soup with lime, scallions and cilantro is my go-to when I want comfort food with Latin flavors. The perfect chicken avocado flavor combo.
Chicken Avocado Soup
It’s also really easy to make, and comes together in less than 30 minutes! The avocado adds a creaminess and richness to the light broth and is naturally low-carb, keto and Whole30 friendly. If you wish, you can also add tortillas or serve it with rice on the side.
Growing up, my mom made soup practically every night whether it was a first course or the main meal. When she made her Colombian soups, avocados were always on the table to eat with the soup. As a kid, I wasn’t a fan, but as an adult I grew to love them and now I practically eat them every day!
Variations and Tips:
- If you don’t have shredded chicken, you can cook 2 chicken breasts in the broth until tender, about 15-20 minutes, then shred with a fork (don’t overcook).
- If you prefer dark meat, boneless skinless chicken thighs work great here too.
- To make it spicy, add jalapeno or serrano peppers.
- To pack for work, bring the broth in a thermos or jar with the chicken, and bring the avocado separate, covered with plastic to prevent it from browning. When ready to eat, slice the avocado and add to the soup.
Chicken and Avocado Soup

- 8 ounces from 2 small ripe hass avocados, diced
- 1/3 cup chopped cilantro
- 4 lime wedges
- kosher salt and fresh pepper, to taste
- 1/8 teaspoon cumin
- pinch chipotle chile powder, optional
Instructions
- Heat a large pot over medium heat.
- Add the oil, 1 cup of scallions and garlic. Sauté about 2 to 3 minutes until soft then add the tomatoes and sauté another minute, until soft.
- Add chicken stock, cumin and chile powder and bring to a boil. Simmer, covered on low for about 15 minutes.

Recipe originally from 2010. Photo Credit: Plays Well With Butter
I have made this soup for my family and let me just say that we are have it at least a few time out of the month. Also when they are sick they request this also. I have been trying your recipes since 2010. Keep up the great recipes.
liked very much
Have seen the recipe twice now must be telling me it’s awesome Getting stuff now to make
Easy and yummy! I did up the spice 1/4 tsp of cumin and 1/8 tsp of Chipotle chili and just squeezed a whole lime into the broth before serving.
Delicious!!!! Reminds me of a chicken tortilla soup but so much quicker to make and just as flavorful. Don’t forget the lime and cilantro at the end. That makes the soup 💕
So e a s y!
This is one of my favorites! I add more cumin and garlic and love the healthy fresh flavor this soup brings and I feel good after I eat it. I always put rice in the soup after it’s made. This is soo good and my kids love it I’ve made it a million times now !
This was delicious! It’s a great recipe that leaves plenty of room for customization. I added a little elote seasoning into my broth and it was so good. I also cooked my chicken breasts in the air fryer with a good dry rub for added flavor on the meat. Will definitely be making this again. I imagine it would be great with some roasted corn and cotija added in.
I have been making this soup for years now, it’s one of my son’s favorites, there’s something special about getting your own lime wedge to squeeze in the soup.
I have tomato-haters in my home so I use my emersion blender in the soup, I also like the consistency it adds. To keep the boys tummies satisfied I add rice.
This will forever be one of my go-tos. Thanks for sharing!
Have this on the stove for the first time! It’s still SO HOT here in Texas, but I’ve been dreaming of soups and so far I feel like this is like a trick question since technically it’s *poured* over the meat. And it smells SO good I cannot wait.
This soup is on my rotation and I really like how simple but so flavorful this soup is. The limes are necessary for this meal. If you want a meatier meal, you can add mushrooms. I’ve done this several times and like it too. Wonderful soup!
This was okay, but I’m in the ‘it was super bland’ category. I used quality broth, spices. Followed to a T. We ate it, but I will change it up quite a bit the next time I make it, if I do. I was looking to use up avocados but eh. I might skip this one next time. That’s ok – can’t please us all all of the time! Was very quick and easy, though!
Oh my goodness. This soup is amazing. The brightness of the cilantro and lime combined with avocado, chicken and a brothy soup is just delicious. Made this for lunches at my desk. Yummy!
Absolutely delicious!! I used chicken Better than Bouillon for the base.
Perfect to warm you up in the winter. Next time, I might try adding some chiles for a hint of heat!
Did this with left over turkey from Thanksgiving and it was GREAT!
I’ve made this recipe but have added extra ingredients which make it an easy version of Caldo Tlapeño (a Mexican soup). I just add carrots, celery, and chickpeas and when it’s ready to serve I sprinkle on some mozzarella cheese. The combo sounds weird but its so tasty and so nutritious. And my kids love spooning out the gooey cheese!
This is my new favorite soup! I’m doing WW the blue plan and the recipe says it’s 4 points, but when I put it in recipe builder I got 8 points. Hoping I’m wrong?
This soup is so delicious! I had all ingredients and slightly increased quantities based on what I had. I cooked 3 huge, partially frozen chicken breasts directly immersed in Better than Bouillion (BTB) ~Roasted Chicken Broth in the Instant Pot and diced the chicken into small chunks as a personal preference.
For added heat we enjoy, I had a couple of chipotle chilies in adobo sauce I needed to use up, so fine chopped them to add to the delightful simmering broth. The broth itself was also made with above BTB roasted chicken base (so flavorful). Closer to serving, I threw in small pouch of frozen cauliflower rice to the hot soup for oomph and texture for the spouse ~ it cooks immediately and we enjoyed that addition.
Quality, grated sharp cheddar was used in the bottom of each of our bowls, then I ladled the hot soup over, Love the green onion, avocado, fresh cilantro finishing touches plus the lime wedge for an authentic taste. Added a small dollop of full fat sour cream on top as a personal habit with these types of soup or chili dishes. It’s definitely going into our meal rotation as a true winner!
Amazing, and feels like a really “clean” dish after the richness of holiday food!
1.5 cups scallions is a lot of scallions. How many bunches?
My husband and I loved this recipe. I used rotisserie chicken which was very flavorful.
Could you adjust this for the Instant Pot?
Yes! I just made it with the instant pot last night. I modified the recipe a bit, but basically its the same conceptually. I used the saute function for the onions and garlic, waited until they were soft (a few minutes), added tomato (I used diced canned tomatoes), gave it a minute. Then added the broth and spices. At this point you could probably hit the soup button (20 min on high pressure) and add your chicken and avocado later. I didn’t have roasted chicken, so I added 2 chicken breasts and used the soup function. Gave it about 5 minutes and then quick released, shredded the chicken and put it back in the soup. I add the avocado after i heat it up for lunch each day.
I’d like to make a batch of this and freeze it. Since it is listed as a freezer meal, can you provide how to prep it as such? I suspect adding the cilantro and scallion won’t make for trouble, but what guidance do you have for the avocado?
The avocado you add just before serving. I would not freeze.
Mine is bland in any bites that have no avocado. Makes me wonder if I made something wrong?
Maybe it’s the broth you used?
Made this with the leftover chicken I had from the skinnytaste instant pot buffalo chicken lettuce wraps and it was so good! The broth was great and the spice from the chicken went really well! Thank you for all your great recipes!
I LOVE this so much! It is so so so good! Thank you Gina!
You’re welcome! Glad you enjoy it!
Absolutely delicious for a weeknight! We added a handful of crunches up tortilla chips and loved the addition of crunch. Will definitely be adding this to our rotation!
This was delish! I made this yesterday and it’s was quick and easy. I did add a little extra cumin. Thanks for sharing this great recipe. I can’t wait to eat it again today.
Delicious! I used baked chicken thighs and breasts that I seasoned verde stye. Also, chicken bone broth. We’re on the Keto Diet…husband and I both enjoyed!
This soup is AMAZING! Salty, savoury, light, creamy from the avocado… The broth is simple to make ahead and pairs well with leftover rotisserie chicken. It’s my new favorite lunch! Don’t skimp on the lime and cilantro- it takes the flavour to a whole other level!
Just made this fabulous soup for dinner tonight. I will definitely be making it again. So good and so easy. Thank you so much for all the delicious recipes. I have lost 10 pounds in the last month just by using you meal plan.
That’s awesome Penny!
So so good.
I loved i
This soup is incredibly delicious. I made it on a very cold, snowy, wintry night in the Northeast. It was comforting and warm, but the flavors reminded me of summers to come…and so healthy! I saw this recipe on The Kitchn. Follow The Kitchn!
Going to make this tonight! Anyone add in the chicken sooner + cook the broth longer for more flavor? Im worried the chicken wont have very much flavor if it hasn’t cooked in the spices.
My picky husband wont eat garlic or scallions, so I am afraid this may be too bland without them…. any suggestions of other flavors to add?! Thank you!!
I just made this soup and my husband said this soup is so good, twice! It’s very flavorful and so fresh with the lime juice. Will definitely make this again… and again! Thank you, Gina!
I made this tonight and it was very flavorful and tasty! So easy to make!
Clarifying question: Does this require chicken STOCK or broth? Ingredient list mentions broth but instructions also mention stock (and broth)?
Either is fine!
OMG- this soup is the bomb.com. Thank you thank you!! ❤️
.
This was perfect on a cold night! I added a small scoop of rice to each serving, too. This will be added to our rotation!
Just made this for dinner and it was amazing!! 🙂 I love simple, healthy recipes. Will definitely be a follower of yours from now on!
Try her Sante fe Chicken! SOOOOOOO easy and delicious.
This was so good! Loved it!
Can you freeze this soup?
Oh my goodness! This soup is definitely in my top 10 favorites of all Gina’s recipes. I used leftover rotisserie chicken breast and substituted shallots for some of the green onions. If you’ve ever eaten the chicken tortilla soup at Cafe Rio – this is close but even more delicious. I added shredded cheese to my husband’s serving. Next time I might add a few low fat tortilla chips. I’m blown away-the best soup ever!
I made this soup tonight ….Wonderful!!!!!
I give it 5 stars!!! I added a bit more seasoning than called fur in the recipe.
For the last four months I’ve become a Pescatarian, is there anyway I could use shrimp in the soup , And if you could to remit recommend how to do it ? it sounds delicious ????
Can I do this in the instant pot???
Gina, I put nutritional info into WW Freestyle and got 7 pots vs. 4. Did I do something wrong? Soup is AMAZING!! Thanks!!
Hi Marty! Are you using the recipe builder? The only accurate way to determine any recipe’s SmartPoints® value is to plug the ingredients into the recipe builder on the Weight Watchers website (Click on “My Foods,” select “Recipe,” and click “Create a recipe.”) which does not count fruits and vegetables in recipes in the calculations as they are now 0 points.
The SmartPoints® calculator isn’t meant for recipes and will often give you the wrong points (usually higher) because it’s counting the fruits and vegetables. So if you see a recipe with a SmartPoints® value that’s different from what the calculator tells you, now you know why.
How could you make this with a crockpot?
Cook on low with the chicken 8 hours or high 4.
Haven’t made this soup in awhile, thought I’d whip it up for this cold winter night. I think this is one of my favorite skinnytaste recipes. Thank you for sharing your delicious recipes and my husband says thanks too! I added 8oz of coconut milk to our batch tonight and it made the broth a little creamy. I have loved it both ways, trust me you can’t go wrong with this one.
Are you using the recipe builder?
What’s the sodium in this one???
Looks so good! Could I make this in instant pot?
Hi Gina. I am a foodie and just by chance I made a chicken soup that was too sparse, so I threw in an slightly underripe large avocado and was stunned at the brilliance of the results. It was a hit and tasted like something new and exciting. So, from one Gina to another, I wanted to see if there was anyone else who had a similar recipe. Only to come across you! Another Gina with the exact same recipe. This is the best Chicken soup recipe.
Love,
Gina
Will this soup keep a day or more in the fridge or must it be eaten right away to avoid the avocados from going bad?
Sure, the avocado you add just before eating. So only cut what you plan on eating.
Made this for dinner tonight and it was great! Very easy to throw together and used leftover rotisserie chicken.
Great!
Just made this soup…. IT'S AMAZING!! Definitely will make it again!
Love love love. My kids (6&2) ate with no hesitation 🙂 this soup reminded me a lot of my moms chicken soup! I added garbanzos (chick peas) when the chicken was almost done cooking; I also used rice as a bed in a bowl– I poured the soup right over it. Amazing, quick, and very comforting for a chilly night.
Thanks, Gina for your amazing recipes! Can't stop making them, and my family love them as well. 🙂
There is a chicken tortilla soup that I get at a Mexican restaurant by me and I love it soooo much. After seeing all the ingredients in your soup (minus the tortillas), I think this may be very close to it. It's in the crock pot now and I can't wait to add the tortilla strips and avocado when I gulp it down. Yummmm
None of your recipes have disappointed yet and I have tried three of four! This one was definitely a hit the only down fall is that there is no left overs!
This weeks menu consist of solely your recipes, and we cannot wait to try them!
This soup was one of the best soups I've made in a long time! Very healthy & very delicious. The only thing I did different was add in some fresh sliced mushrooms, fresh cut carrots, some baby corn and a bad of bean sprouts. DELISH!!!!
Does the nutritional information for the recipe include the avocado?
I made this but made a few modifications: To bulk up the veggies I added 2 carrots and a diced zucchini. I also wanted it to have a lot of citrus flavor, so used 3 small limes. I also added a pinch of smoked paprika and a pinch of cayenne for a little heat. I put 1/4 a cup of brown rice in each bowl as well. Came out really well!
Lucky for me I had this soup planned for this evening, because a cold struck me today! Blech! This soup was delicious, filling, and just what I needed 🙂 Hubby loved it too! We added a touch of sriracha for heat instead of chili powder.
I'm making this for my hubby and me tonight, but serving it more like a vietnamese pho with rice noodles, and having bean sprouts, lime, and sriracha as garnishes… I hope it turns out well! 🙂
I made this tonight and it was delicious! My 3 1/2 year old even ate it! Thank you! I also think your blog is wonderful!!!
Gina, I make this all of the time. When I am trying to cut calories I cut back on the chicken. Still wonderful!
My awesome hubby had this ready when I walked in from work last night – FABULOUS! I am thrilled he is starting to make Skinnytaste recipes. I have been making them for over a year and he is just starting to help with cooking – and loves you too!
I just made this again for the second time & substituted shrimp (cooked them in the broth for about 5 minutes). It was just as good as with the chicken & a nice 2nd option! Yummm.
Wow, I happen to have a pot of stock working now, and will have a couple left over chicken breast…this may be dinner tomorrow night.
Love this soup! We add lime juice, red pepper flakes, and a bit of fish sauce for more flavor. Quick, easy, delicious. What could be better after a busy day?
How do you use this with a crockpot saw a comment but no response would love to use a crockpot but based on reviews I will try anyway as I have a lot of avocados to use up and most of the other ingredients.
This soup makes me SO happy!!!
Just made this for my very, very sick fiancé and he loved it despite his crazy fever 🙂 It was so nice to provide some comfort for him right now! Thank you so much for this recipe!
I sauteed mushrooms with the scallions, and just added the chicken to the soup. Delish!!!
thanks for recipe!!!
Very tasty. Someone gave me a bunch of avocados, so this was great way to put these to use.
I just made this for dinner and it was amazing. Than you so much for such great recipes!
I am such a huge fan of this site! Everything I've made on here has been delicious, and this soup is seriously one of my favorite dishes I've ever cooked, or eaten. So easy, and has all of mine and my fiancee's favorite ingredients. I couldn't believe how yummy it was!
Awesome recipe! I went with the vegetarian style add added the chickpeas 🙂 I also put some brown rice at the bottom of the bowl before adding all the goodness on top 😉
This was really good! Made it last night for myself ( My little family won't come over to the healthy side yet, still working on them lol ) && I'm making it tonight as well lol
Made this for my family (husband and three small boys) and it was a huge hit. Everyone keeps asking when I am going to make it again! Great with corn chips on the side. Thanks!
Does this freeze well or is this more of a make & eat kind of soup? Will it hold for up to like 4 or 5 days? It's late tonight but in a cooking mode and looking for having this later on in the week but wanting to make it ahead of time. Thanks!! So excited – I pinned this and so many people at work saw it and got excited too!
Just made this for sick hubby and he gobbled it up. I ate it too, delicious! Thanks once again Gina! 🙂
Just made this! So yummy! Delish Delish Delish! <3 your website!
Hi Gina!
Love this soup so much! Not sure how you get 14 carbs though. I do low carb and I don't see the 14 carbs in one serving…. A whole avocado has 4-5 carbs and 1/4 cup of tomatoes has almost 5. Am I missing something?
I live on this soup so I thought I had better ask!
hi Marie perhaps the lime adds to the carbs?!?! i dunno just helping with the brainstorming
One and a half cup scallions is around 10 carbs, chicken broth may have 1-2 g of carbs per cup, depending on what brand you use.
That’s total carbs, not net. A whole avocado is 12 grams of total carbs depending on the size
I just found your website and I am so in love! These recipes all look delicious, easy to make, and healthy. I can't tell you how excited I am to expand my menu (I'm sure my husband will be just as excited)!
This was soooo good. I made it last night. When I entered it into the recipie builder on WW web site they said it is 10 points+ per serving.
So delicious! I can't wait to try more recipes!
I have NEVER had a soup more delicious than this one! This is going to be a staple in my house. At least once a week!
I finally made this soup! It was delicious and I commented about it in my recent blog post:
http://www.femme-fitale.com/2012/04/date-with-stair-monster.html
Thank you for all of your amazing recipes!
Oh my goodness Gina, this might be the best recipe I've had from your blog yet. I've always liked cilantro but never really cooked with it until finding your blog. Avacado & cilantro is amazing, and the lime really just makes it.
Wow.
Thanks so much!
Another delicious recipe! Your food is amazing! Thank you again!
I've made four of your recipes in the last week and am loving all your recipes! I love that they are really pretty easy to make as well with not a huge list of ingredients, yet still very tasty! Thank you so much, I'm always excited to get your email update to see what's cooking!
Thank you SO much for all your awesome recipes. I made this for my family and we all devoured it. So much flavor and easy to make. Next time, I will have to make a double batch 🙂
Your recipes are the best, and they're wonderful and low in Points for me.
I've made dozens and dozens of your recipes, but I have to say, this is the best thing I've ever made of yours…likely the best soup I have ever made, period. You should see the number of "Skinny Taste" recipes I have in my kitchen…..you need to do a book!!!
I made this for the first time a couple nights ago. It was SO good!!! Wonderful flavor! I didn't have the cilantro on hand but next time I will try it with cilantro. Muy delicioso!!!
Just made this for supper. nummm
We LOVED this soup. Very yummy, and full of Mexican flavor. Next time, I plan on doubling the recipe 🙂 Thanks!
Made this today! Soooooooooooooooooo good!!! Put it on Pinterest alraedy! 🙂
I made this last night, and LOOOOVED it, I love avocados.. I've been wanting a friend of mine's delicious tortilla soup recipe and I saw this and it looked very similar and turned out to taste identical! I added probably a little extra seasoning, a little onion powder and extra cumin. Thanks for all of your fabulous recipes!
for and avocado to keep it's color and not brown I put plastic wrap on it as soon as I cut it, just make sure you don't leave any air bubbles, the plastic should be completely against the "meat" of the avocado, also leave the pit in, will keep the center from browning! Also try lime juice!!
I finally tried this and it is AMAZING!!! It almost tastes like my moms. Delicious, delicious and delicious!
Saw this recipe when I was first looking at your site and fell in love with it. Finally made it and I'm in love all over again. So easy and SO delicious! Thank you!!
Since you use half an avocado for each bowl, how do I keep the other half of the avocado good (not brown) for the next day's lunch? I love avocado. I would eat this for lunch and dinner for two days! Thanks!
I tried to make it mine didn't come out well not giving up.
can you tell me how i would do this in crockpot? I am in class from 7-4 but would love to start it and have it ready when i get home? But im not sure do i cook the chicken first or put it in raw. I am afraid im not much of a cook but this looks very yummy and as a nursing student who tends to snack at my desk for 8 hrs i would love to eat it when i got home
I had a soup like this at a luxury resort in Mexico. It was the best soup I had ever tasted. I hesitate to say it…yours may be better!
I absolutely love this recipe. It's so simple yet so delicious and filling!
YUM YUM! I added some green chiles and brown rice….. it was great just like all your recipes!
I have tried about 7 different recipes from your site in the last 2 weeks, and every single one of them have been delicious! I made this soup today and I have one word…HEAVEN! Thanks for the great recipes and ideas!
1 bowl?? How much would you say that should be? I wish I trusted myself but if you say 1 bowl I'll look for the largest bowl in my house and call it good. HAHA!!
We just had this soup last night. It was awesome! So easy. Wanted to mention how much the cilantro and lime really make the flavor pop. Also, the only thing I might add next time is green chilies (being from NM and all, we add them to pretty much everything).
I had to tell you that I've pretty much planned out the next two weeks worth of dinners with all your meals. I love how flavorful they all sound. 🙂
Just finished having this soup, it was absolutely delicious!!
I haven't had hominy in years!
This soup is bien sabroso! I like the original but I add pozole (hominy) to bulk it up for a main dinner course. Then it also smells like corn! so that's pretty awesome as far as I'm concerned. thanks gina!
Gina, this soup make my day! I just made some for lunch and my husband and I both loved it. I added about half a cup of rice once it was served and it was great! Thank you so much for the amazing recipes 🙂
Hi Gina,
I just made your soup! I don't usually eat soup, but I thought it would be a healthy snack/ appetizer to try out. It tastes wonderful!
Holy Cow!!! So good!
This soup is AMAZING!!!! I can't wait to try more from your site! BTW, I'm suddenly addicted to browsing through your recipes!
Thanks Tristin, that really means a lot to me!! And yes, this is so simple, yet so good!!
Gina, this recipe is BRILLIANT. I mean, like stellar! So simple to make, so filling and satisfying! My blog-mate Sharon and I are kind of obsessed with your recipes right now–each one we try just keeps getting better. Our husbands even like them, too!
Thanks for helping me eat healthier in a fabulous way!
Great!! Good luck to you on your wedding day!
Hello from Aus! Saw a link to your site on WeddingBee and have bookmarked so many new recipes to try. My fiance said this is his favorite soup ever…I've made it twice in 7 days now. We also loved the lentil and chicken soup. Thanks for sharing, you're making my upcoming Hawaiian vacation/wedding diet easy!
Thanks guys!!! Will do!
Gina, this is the very first thing I made from your site. It is so good…I have it at least once a week. My friends and I get together once a week and share weight watchers recipes and a meal. We so love your recipes! Please keep them coming and thanks for helping us out.
We made this tonight and it was delicious! We added Vermicelli noodles to make it a bit heartier. Thumbs up for sure!
Crushed tortillas I bet was perfect in this soup! Have a great day.
Very tasty! I had some pork broth leftover from making carnitas and used that as a start to this recipe and it was very flavorful! It did remind me of tortilla soup so I crushed some on top at the end. Thanks for the yummy idea and the inspiration. There are many other recipes I have bookmarked to try from you. I've been cooking up a storm lately!
I substituted a drained can of Rotel for the tomato. It added an extra "zing". Love this recipe! I really appreciate your website, too!
I too know this as tortilla soup, and it's been one of my cold-weather staples since long before I started weight watchers. I just made a huge batch in my crock-pot last night. I love how filling it is! I add frozen corn and halved jalapeno and/or serrano peppers to mine as well, and a can of ro-tel rather than tomatoes. I never thought to add lime juice, I'll have to try that!
Oh good, I hate to disappoint!
Amazing! I was so excited to make this and was NOT disappointed!
I would love to see this updated for points plus!
Yes, it would keep well. You don't add the avocado until you are ready to eat it.
Would this soup keep well for a few days? Avocado turns brown after a couple hours so would this soup be gross on day 2?
Thanks, Heather
I made it last night, AMAZING! And so easy to make! I had no chile powder handy so I added some sriacha instead, gave it a great kick! My husband loved it. Thank you! You're amazing, can't wait to make something else tomorrow!
Jasmine
This is what I know as tortilla soup (since tortilla chips are served with it) and I have been looking for a recipe like this! Thanks so much for sharing! You are a kind person to do all of this work!
@Anonymous – You're welcome! I never thought of using tofo but great idea for vegans.
I don't have a cookbook yet, but I do hope to have one in the future. I make my own chicken broth, sometimes I use canned broth, and sometimes a bullion cube works if I have nothing else.
I had some dental work done this week; I was looking for a soup with some slight, but easily chewed texture when I came across your blog. This soup is absolutely fabulous – I switched out the chicken for some firm tofu which I cut into tiny cubes. OMG You made me so happy!!!! This was beyond delicious. My first attempt at chewing was so worth it!!! Thank you, Gina for taking the time to host such an amazing blog.
I love your website. I make your recipes a lot btw I would totally buy a cook book by you. Do you have one? Anyways I have a question. You use broth a lot and where I buy broth it is 3 to 4 dollars per recipe I make. I was wondering if there is a cheaper way to do broth? maybe the bouillon cubes.
Nice idea Laura!! You're welcome!!! I have some shredded chicken and avocados at home, guess what I'm having for dinner tonight!
This recipe is fantastic. I cooked it for the first time tonight. I added a jalapeno to add some kick. Thank you for this blog; it makes me so happy.
@Bridgett, not sure if it would be tart with tomatillos, you could leave the avocado out and maybe add some crushed tortillas.
This soup looks so good, and just like the soups served in Mexico! I'm not big on avocado–any suggestions for an alternate? Tomatillos?
What a delicious and easy meal for a weekday! It was so good!
Made this today….it was delicious!!!! And so easy to make…it literally took 20 minutes. Will definitely make again!
You can freeze it without the avocado. My daughter eats this soup without the avocado, so maybe he would like it without, as a first course.
I made this soup a couple days ago, and it was delicious! However I am the only one in my house eating it, as my husband deems avocados as icky(poor him). Would the leftovers be ok to freeze?
My husband declared this, 'definitely a do-over' meaning he REALLY liked it! Thank you!!
Made this tonight! Awesome!!! My family loved it and I thought it was pretty easy to make. Thanks for the recipe!
-Caroline
I agree Kari, just as good without the chicken as a lighter soup.
This is my third day in a row having this for lunch. I have your crockpot stock portioned into freezer bags, few minutes in the microwave, chop up some avocado, the broth is so flavorful I've even had it without the chicken, just the broth & avocado. YUM!
Awesome!! The crockpot is perfect for this soup!! And Chipotle Cilantro Lime Rice is the perfect side dish!! You're welcome 🙂
Do you cook raw chicken in slow cooker and shred shortly before serving? Or do you recommend cooking/shredding chicken first and then cooking on low for 8 hours?
My mom sent to me to your site Friday. It's now two days later and we've already had two Gina WW dinners. This was the second and my family absolutely loved it. My partner said it was like something he'd have in a restaurant. The lime makes the meal, seriously.
I sauted the veggies earlier today. I put them, the chicken, the seasoning, and the broth in the crock pot to cook all day. When I served it I included Chipotle Cilantro Lime Rice to the options to add to the bowl. Rave reviews from the boys in the house. Thanks, Gina!
Isn't it great? So easy!
Made this soup it was fantastic and easy! Thanks for posting the recipe.
Just made this soup tonight!! WONDERFUL is all I can say!
Your welcome! Rice is a great idea to make this a little heavier. I like the rice on the side, I take a spoon of rice with a little soup, yum!
OH MY GOODNESS!!! I just finished making this for lunch and it was delish. I added a little rice in the soup and added a little more kick. It was SOOO good. I have made so many of your recipes and they NEVER disappoint. Thank you for helping me cook healthy =)
Thanks for sharing how to make this into a vegetarian meal!
I found your site on stumbleUpon today, and *had* to try this recipe. I susbstituted veggie broth for the chicken broth and chickpeas for the chicken to make this vegetarian. It has wonderful flavor, and is very filling.

Thanks for this delicious website! I have tried 5 recipes in the last week since I found it & every one has been spot on. Even my hubby & son have liked everything I've made from here & never realized it was WW friedly!
This soup is on my list of ones I want to make next – I think I'll make it for dinner Fri.
Made this today…perfect soup for a cold snowy day. Very flavorful….thanks for ALL your wonderful recipes!
@Missy- this would be great in the crockpot! The chicken literally falls apart when cooked in the crock pot.
@itsmerosaly- thank you!!! I only publish the recipes we love in my house. If it's just ok, you will never see it here!
@cara- or fish!
I'm trying this one tonight! The weather calls for something just like this and a short trip to the grocery and it's done. Thanks!
sounds great! I bet it would be tasty with shrimp in place of chicken too.
Wow I never heard of an avacado soup, it sounds wonderful and different. I'll give it a try!

This looks AMAZING! I will HAVE to make it this week with all the snow we are getting up here in New England!
Oh YUM! And I have everything to make it except cilantro. I'll have to go to the store when this crazy snow storm ends. Maybe tomorrow!
@Sondra- Thanks…Sure, you can add a link. Good luck with your blog.
I made this vegan just by ommiting the chicken and chicken broth and using portabella mushroom and veggie broth in its place. My family (who are NOT vegans) said it was fantastic and want it again, even the 6 year old! Thanks for the great recipe! 🙂
Sounds delicious – and yes, I am an avocado lover like you.
I love avocado in my soup! It's a latin thing!
